While channel surfing late-night television a few weeks ago, I came across a Food Network show featuring a couple of guys who own a catering business and had won the channel's Next Food Network Star competition. I believe the duo is known as The Hearty Boys. I've seen a few of their shows, and while I won't make all of their recipes, they do have some interesting ideas for entertaining. This is one of those interesting ideas. The most laborious part of the recipe is chopping up the canned artichoke hearts, a couple cloves of garlic, and a few green onions. Seriously, that didn't take long at all. The "batter" came together very quickly, and they fried up in just a few minutes. I used a small disher to measure out the batter into the fryer. These only took 3 minutes to cook through in contrast to the 5 minutes the recipe suggests. I didn't make the sauce - I thought it might be a bit much for these nibbles. A little sea salt as soon as they came out of the fryer and a squeeze of lemon just before serving was all they needed. Not difficult to make, very tasty, and great as a side dish, appetizer, or snack. By the way, a reviewer on the Food Network website did say that she reheated leftovers in a 350 F. oven the next day, and they tasted nearly as fresh as when just made. Good to know!

I love the late spring when asparagus is in season. It's is one of my favorite vegetables and it's so hard to find thin, tender spears any other time of the year. I'm very rushed today, so don't have time to write much about this recipe. Sorry there isn't a photo...I didn't notice until I got home, the guy at the butcher shop sliced my prosciutto too thick and it did not look pretty at all (still tasted good). You don't really need salt for this recipe because the prosciutto is salty enough on its own.
Grilled Asparagus & Prosciutto serves 4
1 bunch asparagus 1T olive oil 4oz prosciutto (paper thin) 2oz shaved parmesan (optional, I use parmigiana reggiano, shaving is easy using a veggie peeler) tt black pepper.

Serves 2 Preparation time 5 minutes Cooking time 40 minutes Ingredients: - 1 and 1/3 cup all purpose flour
- 2 tbsp olive oil
- 2 tsp dry yest
- 1 tbsp oil
- 1/2 cup water
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp oregano
- 1 tsp pepper
- 2 cloves of garlic, minced
- 5-6 sum dried tomatoes
- 1/2 cup parmesan cheese
- salt to taste
Directions: Mix all ingredients in a bowl and knead into a soft dough. Put this dough in a greased bowl and let rise for half an hour. Transfer in a baking tray and bake for about 30 minutes or until golden brown at 230degrees C. Serve warm with dips.

Serves 2 Preparation time 10 minutes Cooking time 10 minutes Ingredients: - 1/2 cup mushrooms, finely chopped
- 1/2 cup broccoli, finely chopped
- 1 onion, finely chopped
- 4-5 cloves of garlic, minced
- salt and pepper to taste
- 1 tsp butter
- 1tbsp cheese
- french baguette, cut into thick slice
- olive oil
Directions: In a wok heat butter and saute onions in it. Add minced garlic and saute. Next add mushrooms and broccoli. Season with salt and pepper and saute until the mixture is dry. Next add cheese and mix well and set aside. Apply some olive oil in slices of french baguette. Spoon the mushroom broccoli mixture and bake the crostinis for 5 minutes or until golden brown at 180 degrees C. Serve hot.

Serves 2-4 Preparation time 20 minutes Cooking time 30 minutes Ingredients:
- 3 medium sized potatoes, diced into bite sized pieces
- 1 medium onion, finely chopped
- 3-4 cloves of garlic, minced
- Green chillies - 2-3 (cut finely)
- 1 medium bell pepper, cur into thick strips
- 1/2 cup fresh corriander leaves, finely chopped
- 1 tbsp olive oil
- 1 teaspoon lemon juice
- salt and pepper to taste
- oil for frying the potatoes
Directions: Heat oil and fry the diced potatoes like french fries until crisp. Once golden remove on a tissue papaer to absorb the excess oil. After all the potatoes are fried heat olive oil in a wok. Add onions garilc, bell pepper and green chillies and saute for a minute. Once done add the potatoes, season with salt pepper and lemon juice. Add half od the corriander and toss well. Transfer in a serving platter and garnish with the remaining corriander. Serve immediately.

Serves 2-4 Preparation time 10 minutes Cooking time 20 minutes Ingredients: - 1/2 cup cottage cheese (Paneer), crumbled
- 1/3 cup spring omions, finely chopped
- 1/4 cup olives, finely chopped
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 2 cloves of garlic, minced
- 1 tsp chilly flakes
- salt to taste
- french baguette, cut into thick slices
- olive oil
Directions: In a bowl mix all the ingredients. Apply olive oil to the baguette slices and spoon the mixture on each slice. Bake in the oven at 180 degrees C for 10 minutes or until the bread turns golden brown.
