Fresh green beans are my best! I learned that you can test their freshness when breaking them in half; those that are young have a thin, delicate thread that comes off easily in the join; the older ones, it`s thicker and drier. Frozen beans are not a touch on the fresh variety. On the other hand, frozen peas are as delish as their fresh cousins. thank you for reminding me of my favourite veggie. BTW the greener the vegetable, the more iron inside.

Having grown up in the country, we had tons of green (string) beans. We thought nothing of canning 250-300 quarts each summer. I still eat a ton of green beans -- a broccoli too! Both are good for the liver, amongst other things. I love to steam my green beans in my rice steamer.

BTW, my dogs eat canned green beans ever day -- it's also gret for dogs that need to lose weight because the bult from the beans helps them feel full faster.

I am surprised that green beans are so healthy. I always thought that they contained less vitamins that other green vegetables. My family likes green beans, so I guess I'll need to make them more often. Thanks.

GREAT recipe! Sauerkraut is a favourite of the Germans, and has natural probiotics! It's sour and has a sweet apple-dy taste. A little goes great with salad and rice porridge.

Question: Greens beans are "string beans", Carole? ---> http://www.mark-pearson.com/indian-cooking-recipe-pictures/Gujerati-Style Green Beans - uncooked green beans - close-up.jpg

Or these here? ---> http://www.worldcommunitycookbook.org/season/guide/photos/greenbeans.jpg

Some European countries also consider Fava beans and Lima beans as "green beans".

Green beans provide natural insulin and have healing constituents for the pancreas. Green (string) bean juice (2-4 ounces) daily will greatly help to speed up healing of diabetes. - Naturalnews.com

No toxic mentioned on http://www.whfoods.com/genpage.php?tname=foodspice&dbid=134 either.

And according to Mercola.com, green beans can be eaten raw like salad.

But does that mean the Phasic Acid (phasic gamma-aminobutyric acid) in green beans exist only in Germany? The answer is no.

Lectin phytohaemagglutinin is the compound that makes phasic acid a problem - it gives you gastric. It is much more concentrated in red kidney beans (than in green beans). And if you're already allergic to certain foods, all the more for you to cook your green beans. (Ref: Stephen Facciola's Cornucopia list of poisonous plants and foods)

As they say, the devil is in the details! This blog entry here merits a title like "Green Beans Exposed"!! A very NICE change from the usual masks articles from you, Carole! GOOD JOB!!!

Thanks for comment, Ramaraobobby! I know people who prefer uncooked plants diet. Sure they eat raw vegetables with a pleasure. And I agree that it is very useful and tasty too. But as for green beans, as far as I know, they can not be used raw, because they contain a toxic substance called phasin, a protein that interferes with digestion, which can only be destroyed while cooking. That's why I mention about it specially.

If it's interesting for you, you can read more in the book "Making Sauerkraut and pickled vegetables at home" by Klaus Kaufman DSc and Annelies Schoneck.

Yah.. vegetables in green are said to be natural and very healthy. I think its even better if you eat them raw coz the moment you heat them, the so called PRANA SAKTHI will be evaporated and what you will end up in eating is just the useless remains, which doesn't have any natural green Juices.

Why it is not recommended to eat raw beans Carole??
The only thing is you have to chew them thoroughly if not they can create digestive probs. Other than that I can't find any reason of why its not recommended to eat in raw. Let me know about that....

also thanks for the simple recipes, will try them all...
